Amaretto Pecan Rum Balls

These delightful confections are made with low-fat vanilla wafer crumbs, finely chopped pecans, white chocolate chips, a little powdered sugar, corn syrup and both rum and Amaretto. Each rum ball is rolled in raw sugar granules and served in a foil candy cup. This is a confection to round off a special tea or dinner, paired with coffee or tea, although many people just enjoy eating them “out of hand”.
